Easy Chilli sauce recipe

Raw Chili Garlic Sauce

Ingredients:
6 ounces hot chillies (cayenne, habanero, jalapeno, Thai or Scotch Bonnet are best) stemmed and chopped
3 cloves garlic, chopped
1.5 teaspoons sugar
0.5 teaspoon salt
1.5 tablespoons distilled white vinegar

Blend all the ingredients with a hand blender or food processor to a coarse chop. At this point, the smell of the mixture should induce a mild sweat! Taste the blend and flavour with extra salt or sugar. Transfer to a small jar and refrigerate. Let stand for 1 hour before use; this allows the flavours to blend. This recipe makes about 2/3 cup.

Chile Chipotle Salsa

Ingredients
4 Chipolte chillies
250ml Boiling water
1 tbsp Oil
180ml Diced onion
180ml Bell pepper
500ml Fresh tomatoes, peeled and diced
1/2 tsp Oregano

Preparation:
Add the chillies to the boiling water, then soak for 30 min. Remove any stems and seeds, then chop. Using a heavy saucepan, heat the oil and saute the onion, sweet pepper, and chipoltes until the onion is slightly tender (1-2 min). Add the chillies, including the soaking water, tomatoes and oregano and remove from the heat. Process briefly in a food blender until the ingredients are well mixed, but still chunky.
