Easy Chilli sauce recipe
Ingredients:
* 6 fresh tomatoes, diced
* 2 medium onions, chopped
* 4 whole jalapeƱo peppers, chopped
* 3/4 cup vinegar
* 1/3 cup sugar
* 1/3 teaspoon salt
* 1/2 teaspoons red chili flakes
Method:
* Peel the tomatoes by soaking them in boiling water for a minute and stripping the skins
* Add all ingredients into a stockpot and bring to the boil, whilst stirring
* Boil for 15-20 minutes
* Allow the mixture to cool then process with a food blender.
* Return to the heat and gently simmer for 30 minutes, until it reaches the desired consistency

Raw Chili Garlic Sauce
Ingredients:
6 ounces hot chillies (cayenne, habanero, jalapeno, Thai or Scotch Bonnet are best) stemmed and chopped
3 cloves garlic, chopped
1.5 teaspoons sugar
0.5 teaspoon salt
1.5 tablespoons distilled white vinegar
Blend all the ingredients with a hand blender or food processor to a coarse chop. At this point, the smell of the mixture should induce a mild sweat! Taste the blend and flavour with extra salt or sugar. Transfer to a small jar and refrigerate. Let stand for 1 hour before use; this allows the flavours to blend. This recipe makes about 2/3 cup.

Chile Chipotle Salsa
Ingredients
4 Chipolte chillies
250ml Boiling water
1 tbsp Oil
180ml Diced onion
180ml Bell pepper
500ml Fresh tomatoes, peeled and diced
1/2 tsp Oregano
Preparation:
Add the chillies to the boiling water, then soak for 30 min. Remove any stems and seeds, then chop. Using a heavy saucepan, heat the oil and saute the onion, sweet pepper, and chipoltes until the onion is slightly tender (1-2 min). Add the chillies, including the soaking water, tomatoes and oregano and remove from the heat. Process briefly in a food blender until the ingredients are well mixed, but still chunky.
