Chilli Chocolate Sausages
Tender Gourmet Meats' butcher Adam Stratton has begun producing a beef, chilli and dark chocolate sausage - and has taken out the gourmet section of the Australian Meat Industry Council's gourmet sausage prize!
The chilli chocolate sausage was just one of six snags that took him to first prize in all six categories of the recent competition.
Adam said "We took a big risk entering the chilli and dark chocolate into the competition because not everybody will like dark chocolate in a sausage, but we have made it to suit our customers' palates and they love it - we sell 20kg a week!"
Mr Stratton has won five gold medals at the Sydney Royal Fine Food Show earlier this year too, including the "champion gourmet sausage" prize for his moreish moroccan lamb and raisin variety.
"Freshness and consistency are the most important things and it's good to see that after 12 years we are the best at making sausages," he said.
